CHOCOLATE CUP CAKES

RECIPE SUBMITTED BY,
ROJA MEERAN,
DOHA,QATAR

 Chocalate Cup Cakes:
Ingredients:

Self raising flour or maida  _ 1 cup
Caster sugar _ 3/4th cup
Butter _ 100 gms
Eggs _ 2
Cocoa powder _ 4 tbsp(can be increased or decreased acc. to your chocolaty tongue)
Vanilla essence _ 1tsp
Soda bicarbonate _ 1/2 tsp
Baking Powder _ 1tsp(use baking powder only if you use maida,If you use self raising flour skip this)
Milk _ 1/2  cup or 125ml

Chocolate Buttercream frosting:

Unsalted butter_100 gms(brought to room temp.)
Icing sugar _1 cup
Cocoa powder _ 1tbsp
Milk _1tbsp

Method:

1.Preheat Oven to 180 degree conventional or 160 degree celsius,fan forced.

2.Using a hand blender or mixer,blend butter,sugar and vanilla essence until the mixture becomes creamy and fluffy.Add eggs and whip with the mixer for 5 to 10 minutes,so that everything combine together well.

3.Along with this mixture,now add all the dry ingredients...seived,cocoa,flour and soda bicarbonate.
Now add milk to this mixture.Fold well using hand mixer.

4.Keep the cup cake liners inside the cupcake mould and pour the creamed mixture 3/4 of each liner.
Bake for 15 minutes at 180 degree conventional.(or acc to your kitchen oven's baking method)

For topping,icing chocolate butter cream:

Beat butter until soft and fluffy.Add icing sugar and cocoa,mix well.Pour milk and beat well until fluffy.

Decoration:

Pour the chocolate cream mixture in the decorater pipe and decorate as you wish.

 In this picture,I have just decorated with chcocolate butter cream.

In this picture,In the centre cake...I have placed a scoop of strawberry icecream...

In this picture, I have placed little strawberry jam over the ice cream...
In this picture, I have poured some chocolate syrup over the cupcakes...
Chocolate syrup:
1 part of water and 1 part of sugar with 1 tsp of cocoa powder boiled to have syrup consistency.

You can decorate the cake with your own ideas with fruits nuts etc.,

SOYA POTATO CUTLET

RECIPE SUBMITTED BY,

                  SOYA POTATO CUTLET:
Ingredients:
1.Soya chunks  _ 3/4 th cup
2.Boiled and mashed Potato _1/2 cup
3.Chopped Onion _1/4th cup
4.Finely chopped ginger,garlic _1 tsp
5.Chilli powder _1/2 tsp
6.Garam Masala _1/2 tsp
7.Salt _1 tsp
8.Chopped coriander leaves _ little
9.Bread crumbs_just to coat the cutlets.

Method to prepare:
1.Soak soya chunks in hot water for 10 minutes.
2.Squeeze out all the water completely and keep it in strainer for 10 minutes.You can use tissue paper to remove all moisture,as if any moisture is left,it will break the shape of cutlet.
3.Now,grind the dry soya chunks in mixie,15 seconds is enough,it will be like flakes.
4.Now in a bowl,mix the soya chunks grinded,add mashed potato,onion,garlic,ginger,salt,chilli powder,garam masala,coriander leaves.
5.Mix the ingredients thorougly and taste for salt and chilli.
6.Now make big balls,flatten  and dip both the sides with breadcrumbs.
7.Shallow fry the cutlets ,both the sides till they turn brown.
8.Soya is rich in protein and potato in carbohydrates.
9.Serve it with Tomato Ketchup or green Chutney.
10.You can make the dough into balls and fry it in oil.It will Soya Potato balls.

BREAKFAST NO.11 EGG PANIYARAM


RECIPE SUBMITTED BY,

                                                            EGG PANIYARAM.



Ingredients:
      white rice                                                                 idli rice
                                                         urad dhal and methi seeds

White or raw rice-1 cupIdli rice-3 cups
urad dhal-1 cup
methi seeds-2 teaspoon
Method:

1.Soak raw rice and idli rice together,soak urad dhal and methi seeds together 6 hours or overnight.

2.Grind urad dhal and methi seeds batch first,very smoothly and grind white rice and idli rice batch the next round in a grinder.

3.After grinding,pour both the batter in a large bowl and add 2 teaspoon of salt.

4.Now mix the batter with the help of your hands thoroughly and keep it in a warm place to ferment for about 6 hours or overnight.

5.The fermentation is ready and you could see the batter raised.Now it is ready for making Paniyaram.

6.See to that the batter is thick than Dosa batter..Later on ,you can add water to make Dosa with the same batter.

7.Now you can you can pour the batter in Paniyaram pan and make paniyaram.

8.Cook them for 5 to 10 minutes,by making them crispier on both the sides.

9..For egg paniyaram,beat 1 egg in a bowl,add half cup of batter...beat them together and make paniyaram.

10.Serve the Paniyaram with tomato chutney or shredded coconut and sugar.

BREAKFAST NO.1 DOSA

Cone Dosa

We are now going to see how to make the breakfast for the day no.1
Let us see how to make Dosa....
Ingredients:
      white rice                                                                 idli rice
                                                         urad dhal and methi seeds

methi seeds-2 teaspoon
Method:

5.The fermentation is ready and you could see the batter rised.Now it is ready for making Dosas.

6.Rub the Dosa Tawa with little oil and spread the batter.Pour a tsp of oil.

7.Wait for one side to cook.Now flip the Dosa to other side and cook for a minute or so.

8.Now crispy Dosa is Ready to eat.Serve it with any chutney.
